Description

A traditional Shoofly Pie featuring a rich molasses filling topped with a crumbly brown sugar and butter topping, baked in a flaky pie crust.


Ingredients

  • 1 (9-inch) refrigerated pie crust
  • 1 cup molasses
  • ¾ cup boiling water
  • 1 egg, room temperature
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup dark brown sugar, packed
  • ½ cup (1 stick) salted butter, softened

Instructions

  1. Preheat your oven to 400°F (204°C) and spray a 9-inch deep dish pie pan with nonstick cooking spray.
  2. Press the refrigerated pie crust into the pie pan and crimp the edges. Set aside.
  3. In a large bowl, stir together the molasses and boiling water. Add the beaten egg, baking soda, salt, cinnamon, and nutmeg, mixing well.
  4. Pour the filling into the pie crust.
  5. In another bowl, mix the flour and dark brown sugar. Blend in the softened butter until crumbly.
  6. Sprinkle the crumb topping over the molasses filling.
  7. Reduce the oven temperature to 350°F (177°C) and bake for about 40 minutes until the center is set and the topping is golden brown.
  8. Allow the pie to cool slightly, then serve warm or at room temperature.
