Description
Peppermint Bark Cookies combine rich chocolate cookies with peppermint bark topping and creamy peppermint buttercream frosting.

- ½ cup unsalted butter, room temperature
- ¾ cup light brown sugar, packed
- 2 tablespoons granulated sugar
- 1 large egg, room temperature
- 2 teaspoons vanilla extract
- 1 & ¼ cups all purpose flour
- ½ cup unsweetened cocoa powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup semi-sweet chocolate chips
- ½ cup white chocolate chips or chopped baking bar
- 1 tablespoon crushed peppermint candies
- ½ cup unsalted butter, softened
- 4 cups confectioners sugar
- 3–4 tablespoons milk
- 1 teaspoon vanilla extract
- ¾ teaspoon peppermint extract
Instructions
- Beat together unsalted butter, light brown sugar, and granulated sugar until fluffy and well combined.
- Mix in the egg and vanilla extract until well incorporated.
- Sift together flour, cocoa powder, baking soda, and salt. Gradually add to wet ingredients, mixing until just combined.
- Cover dough and refrigerate for at least 30 minutes.
- Preheat oven to 350ºF (175ºC) and line a baking sheet with parchment paper.
- Divide dough into 6 equal portions, rolling each into a ball. Place on prepared baking sheet.
- Bake for 10 to 12 minutes. Let cool on the baking sheet for 10 minutes before transferring to a wire rack.
- Melt semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Spread over parchment paper.
- Melt white chocolate chips and spread over the semi-sweet chocolate layer.
- Sprinkle crushed peppermint candies over the white chocolate layer.
- Refrigerate for 30 minutes until set. Allow bark to sit at room temperature for 15 minutes before breaking into pieces.
- Whip softened butter, confectioners sugar, 3 tablespoons milk, vanilla extract, and peppermint extract until smooth. Add more milk if needed.
- Pipe swirls of buttercream onto cooled cookies.
- Top each cookie with a few pieces of peppermint bark.
- Add extra crushed peppermint pieces on top if desired.
