Description

Peppermint Bark Cookies combine rich chocolate cookies with peppermint bark topping and creamy peppermint buttercream frosting.


Ingredients

  • ½ cup unsalted butter, room temperature
  • ¾ cup light brown sugar, packed
  • 2 tablespoons granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 1 & ¼ cups all purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup semi-sweet chocolate chips
  • ½ cup white chocolate chips or chopped baking bar
  • 1 tablespoon crushed peppermint candies
  • ½ cup unsalted butter, softened
  • 4 cups confectioners sugar
  • 34 tablespoons milk
  • 1 teaspoon vanilla extract
  • ¾ teaspoon peppermint extract

Instructions

  1. Beat together unsalted butter, light brown sugar, and granulated sugar until fluffy and well combined.
  2. Mix in the egg and vanilla extract until well incorporated.
  3. Sift together flour, cocoa powder, baking soda, and salt. Gradually add to wet ingredients, mixing until just combined.
  4. Cover dough and refrigerate for at least 30 minutes.
  5. Preheat oven to 350ºF (175ºC) and line a baking sheet with parchment paper.
  6. Divide dough into 6 equal portions, rolling each into a ball. Place on prepared baking sheet.
  7. Bake for 10 to 12 minutes. Let cool on the baking sheet for 10 minutes before transferring to a wire rack.
  8. Melt semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Spread over parchment paper.
  9. Melt white chocolate chips and spread over the semi-sweet chocolate layer.
  10. Sprinkle crushed peppermint candies over the white chocolate layer.
  11. Refrigerate for 30 minutes until set. Allow bark to sit at room temperature for 15 minutes before breaking into pieces.
  12. Whip softened butter, confectioners sugar, 3 tablespoons milk, vanilla extract, and peppermint extract until smooth. Add more milk if needed.
  13. Pipe swirls of buttercream onto cooled cookies.
  14. Top each cookie with a few pieces of peppermint bark.
  15. Add extra crushed peppermint pieces on top if desired.
