- 2 cups Heavy cream
- 1 cup Whole milk
- 1/2 cup Granulated sugar
- 1 tbsp Vanilla bean or extract
- 1 tbsp Gelatin powder
- 1/4 cup Cold water
Instructions
- Bloom the gelatin: Sprinkle gelatin over 1/4 cup cold water in a small bowl. Let sit until fully absorbed and plump, about 5 minutes.
- Heat the cream: In a medium saucepan, combine heavy cream, whole milk, sugar, and vanilla bean seeds. Warm over medium heat until steaming and sugar dissolves, about 3–4 minutes. Do not boil.
- Incorporate gelatin: Remove the pan from heat. Stir in the bloomed gelatin until completely dissolved.
- Strain and pour: Pour the mixture through a fine-mesh sieve into lightly oiled ramekins or molds.
- Chill thoroughly: Let panna cotta cool to room temperature before transferring to the refrigerator. Chill at least 4 hours or up to overnight until set.
- Unmold and serve: Run a warm knife around the ramekin edges, then invert onto plates. Serve with your favorite toppings.
Notes
- Optional: Add a sprig of mint for color.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- For a dairy-free version, substitute coconut milk and cream.
