Ingredients

  • 2 cups Heavy cream
  • 1 cup Whole milk
  • 1/2 cup Granulated sugar
  • 1 tbsp Vanilla bean or extract
  • 1 tbsp Gelatin powder
  • 1/4 cup Cold water

Instructions

  1. Bloom the gelatin: Sprinkle gelatin over 1/4 cup cold water in a small bowl. Let sit until fully absorbed and plump, about 5 minutes.
  2. Heat the cream: In a medium saucepan, combine heavy cream, whole milk, sugar, and vanilla bean seeds. Warm over medium heat until steaming and sugar dissolves, about 3–4 minutes. Do not boil.
  3. Incorporate gelatin: Remove the pan from heat. Stir in the bloomed gelatin until completely dissolved.
  4. Strain and pour: Pour the mixture through a fine-mesh sieve into lightly oiled ramekins or molds.
  5. Chill thoroughly: Let panna cotta cool to room temperature before transferring to the refrigerator. Chill at least 4 hours or up to overnight until set.
  6. Unmold and serve: Run a warm knife around the ramekin edges, then invert onto plates. Serve with your favorite toppings.
