- 1 1/2 cups shredded carrots

Instructions
- In a medium bowl, beat the cream cheese with a hand mixer until light and fluffy.
- Add the powdered sugar and vanilla extract, and continue mixing until well combined.
- Fold in the shredded carrots until evenly distributed.
- Using a small cookie scoop or spoon, form the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
- Refrigerate the truffles for at least 30 minutes to firm up.
- Just before serving, roll the chilled truffles in the ground cinnamon to coat.
