Instructions
- Slice the Beef: Begin by cutting the striploin steaks against the grain at a diagonal. Aim for strips no more than 0.5 cm thick to ensure they cook evenly and remain tender.
- Prepare the Marinade: In a large bowl, whisk together the marinade ingredients: soy sauce, Chinese Shaoxing wine, bicarbonate soda, and cornflour. Add the beef strips, mixing well to coat each piece thoroughly. Let it marinate for 10 minutes for maximum flavor.
- Mix the Stir-Fry Sauce: While the beef marinates, combine the oyster sauce, Chinese Shaoxing wine, soy sauce, dark soy sauce, sugar, ground black pepper, and white vinegar in a small bowl. Set it aside for later.
- Heat the Pan: In a large non-stick frying pan, heat the vegetable oil over high heat. Once sizzling, add minced garlic and chopped onion, stir-frying for about 30 seconds until fragrant and slightly softened.
- Cook the Beef: Push the garlic and onion to the sides of the pan, then add the marinated beef strips in the center. Allow the beef to sear for about 2 minutes, spreading it out so it browns well. Stir-fry everything together until the beef is almost cooked through.
- Add the Capsicum: Toss in the capsicum strips next and stir-fry for an additional 30 seconds, ensuring the beef is just cooked and the capsicum remains crisp.
- Incorporate the Sauce: Add the stir-fry sauce to the pan and stir-fry for another 10 seconds, making sure everything is evenly coated. Turn off the heat and gently fold in the spring onions for a fresh crunch.
