Description

A quick and delightful Super Tender Beef Stir-fry that’s packed with flavor, perfect for weeknight dinners.

Ingredients

Scale
  • 500 g striploin steaks (Cut against the grain for maximum tenderness.)
  • 2 tbsp vegetable oil (A high smoke point is key for frying at high temperatures.)
  • 3 garlic cloves (Mince or slice for intense flavor.)
  • 1 onion (Adds sweetness; can be swapped for shallots if preferred.)
  • 2 capsicums (Use a mix of colors for a vibrant dish.)
  • 2 spring onions (Add them at the end for a fresh crunch.)
  • 1 tbsp soy sauce (Elevates umami flavors in beef.)
  • 1 tbsp Chinese Shaoxing wine (A great flavor booster; replace with sherry if necessary.)
  • ½ tsp bicarbonate soda (Tenderizes the beef.)
  • 3 tsp cornflour (Helps to create a velvety texture.)
  • 3 tbsp oyster sauce (Provides deep, savory notes.)
  • 3 tbsp Chinese Shaoxing wine (Reinforces the flavors when cooking.)
  • 2 tbsp soy sauce (A second layer of umami.)
  • ½ tsp dark soy sauce (Adds depth and color.)
  • 2 tsp sugar (Balances the savory with sweetness.)
  • 1½ tsp ground black pepper (Adds warmth and heat.)
  • 2 tsp white vinegar (Brightens the overall flavor profile.)

Instructions

  1. Slice the Beef: Begin by cutting the striploin steaks against the grain at a diagonal. Aim for strips no more than 0.5 cm thick to ensure they cook evenly and remain tender.
  2. Prepare the Marinade: In a large bowl, whisk together the marinade ingredients: soy sauce, Chinese Shaoxing wine, bicarbonate soda, and cornflour. Add the beef strips, mixing well to coat each piece thoroughly. Let it marinate for 10 minutes for maximum flavor.
  3. Mix the Stir-Fry Sauce: While the beef marinates, combine the oyster sauce, Chinese Shaoxing wine, soy sauce, dark soy sauce, sugar, ground black pepper, and white vinegar in a small bowl. Set it aside for later.
  4. Heat the Pan: In a large non-stick frying pan, heat the vegetable oil over high heat. Once sizzling, add minced garlic and chopped onion, stir-frying for about 30 seconds until fragrant and slightly softened.
  5. Cook the Beef: Push the garlic and onion to the sides of the pan, then add the marinated beef strips in the center. Allow the beef to sear for about 2 minutes, spreading it out so it browns well. Stir-fry everything together until the beef is almost cooked through.
  6. Add the Capsicum: Toss in the capsicum strips next and stir-fry for an additional 30 seconds, ensuring the beef is just cooked and the capsicum remains crisp.
  7. Incorporate the Sauce: Add the stir-fry sauce to the pan and stir-fry for another 10 seconds, making sure everything is evenly coated. Turn off the heat and gently fold in the spring onions for a fresh crunch.
