This Deconstructed Stuffed Pepper Casserole is a comforting and flavorful one-pan dish that captures the essence of classic stuffed peppers without the hassle of stuffing individual peppers.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground pork
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 large green bell pepper, chopped
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon dried dill
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)
  • ½ cup rice (uncooked)
  • 1 cup low sodium chicken broth
  • 14 ounces diced tomatoes (1 can, including juice)
  • 1 cup cheddar cheese, shredded
  • 1 tablespoon fresh parsley, chopped
  • Sour cream for serving (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground pork and ground beef, breaking them apart as you cook. Continue cooking for about 5 minutes or until the meat is fully browned and no longer pink.
  2. Add the chopped onion and green bell pepper to the skillet. Stir in smoked paprika, garlic powder, red pepper flakes, dried dill, salt, and pepper. Cook for another 5 minutes, allowing the vegetables to soften and the spices to blend.
  3. Stir the uncooked rice into the skillet mixture. Pour in the chicken broth and the diced tomatoes with their juice. Reduce the heat to medium and simmer, stirring occasionally, for 10 to 15 minutes until the rice is fully cooked and has absorbed the liquid.
  4. Sprinkle shredded cheddar cheese evenly over the top of the casserole. Allow it to melt for a couple of minutes. Garnish with freshly chopped parsley.
  5. Serve the casserole immediately. For extra creaminess and flavor, add a dollop of sour cream on top if desired.
