Ingredients

  • 500 g Minced Beef
  • 1 tbsp Freshly Minced Garlic
  • 1 tbsp Dark Soy Sauce
  • 1 tbsp Tamari or All-Purpose Soy Sauce
  • 1 tbsp Rice Wine Vinegar
  • 1 tbsp Brown Sugar
  • 1 tsp Sesame Oil
  • 2 Spring Onions (Scallions)
  • 1 Carrot
  • ½ head Wombok Cabbage
  • ¼ cup Hoisin Sauce
  • ¼ cup Crushed Roasted Peanuts (optional)
  • Lime Wedges

Instructions

  1. Cook the Noodles: Begin by preparing the rice noodles according to the packet instructions. Once cooked, drain and rinse them under cold water. Toss with sesame oil to prevent sticking and set aside.
  2. Sauté the Aromatics: Heat olive oil in a large, deep frying pan over medium-high heat. Add minced garlic and the white parts of spring onions. Sauté for 30 seconds until softened and fragrant.
  3. Brown the Beef: Add the minced beef to the pan, breaking it apart as it cooks. Continue cooking for about 5–7 minutes until it’s beautifully browned.
  4. Add the Veggies: Stir in the julienned carrot and finely shredded cabbage. Cook for another 2–3 minutes until the vegetables are tender but still vibrant.
  5. Combine the Sauces: Pour in hoisin sauce, tamari (or soy sauce), dark soy sauce, rice wine vinegar, brown sugar, and sesame oil. Stir well and cook for 2–3 minutes until everything is nicely coated and sticky.
  6. Serve Your Dish: Divide the noodles into four bowls. Top each with the sticky beef mixture, a sprinkle of crushed peanuts, and the green parts of the spring onion. Serve with lime wedges for that zesty touch!
