Ingredients

  • 1 large egg white
  • 1 tsp vanilla extract

  • 1/4 tsp salt
  • 1/3 cup sprinkles
  • Additional granulated sugar (for rolling dough balls)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper to prevent sticking and set it aside.
  2. In a stand mixer fitted with the paddle attachment, combine softened butter, granulated sugar, and brown sugar. Beat on medium speed until the mixture is light in color and fluffy, about 2-3 minutes.
  3. Mix in the large egg white and vanilla extract, continuing to beat for another 30 seconds, or until fully incorporated and smooth.
  4. Add the all-purpose flour, baking soda, baking powder, and salt to the wet mixture. Mix on low speed just until the flour disappears and the dough comes together.
  5. Gently fold the sprinkles into the dough with a spatula, distributing them evenly for a colorful effect.
  6. Using a small cookie scooper (about 2 tablespoons), scoop equal portions of dough. Roll each dough ball in granulated sugar to coat, then place them on the prepared baking sheet, spacing about 2 inches apart.
  7. Bake the cookies in the preheated oven for 8 minutes. They should be just set and the edges lightly golden.
  8. Remove the baking sheet from the oven and allow the cookies to rest on it for 5 to 10 minutes to firm up. Then transfer the cookies to a cooling rack to cool completely.
