- 1–2 slices Pepper Jack Cheese

- 1/4 cup Spicy Mayo

- 1/4 cup Sliced Pepperoncinis
- 1/4 cup Red Onion, thinly sliced
- 2 tablespoons Red Wine Vinegar
- Salt to taste
- Pepper to taste
- 2 tablespoons Chimichurri
Instructions
- Slice the ciabatta roll horizontally and toast it until golden brown and crispy, about 5-7 minutes.
- On the bottom piece of the toasted ciabatta, spread a generous layer of spicy mayo.
- Place shredded rotisserie chicken on top of the mayo, add pepper jack cheese, and melt in the microwave or oven until bubbly, around 30-60 seconds.
- In a bowl, combine shredded lettuce, sliced red onion, and pepperoncinis. Toss lightly with red wine vinegar and season with salt and pepper.
- Top the melted chicken and cheese with the fresh veggie mixture.
- Spread chimichurri on the top piece of bread, close the sandwich, and enjoy!
