Ingredients

  • 2 medium Yellow peaches (sliced)
  • 1/2 cup Peach preserves
  • 1 tablespoon Extra virgin olive oil
  • 2 tablespoons Soy sauce
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 2 cloves Garlic (minced)
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon Red pepper flakes (optional)
  • 1 pound Boneless, skinless chicken thighs
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Chili powder
  • 2 tablespoons Extra virgin olive oil (for cooking)
  • 1 medium Jalapeno pepper (sliced)

Instructions

  1. In a medium bowl, combine the peach preserves, sliced peaches, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Mix until well incorporated and set aside.
  2. Pat the boneless chicken thighs dry with a paper towel. In a small bowl, mix 1 teaspoon of kosher salt, ½ teaspoon of black pepper, and ½ teaspoon of chili powder. Rub this seasoning mixture evenly over each chicken thigh.
  3. In a large nonstick skillet, heat 2 tablespoons of extra virgin olive oil over medium heat. Add the seasoned chicken thighs and cook for 5 minutes without moving them. Then, flip the chicken, reduce heat to medium-low, and cook for an additional 5 minutes, or until the chicken reaches an internal temperature of 165°F.
  4. Using the same skillet, raise the heat back up to medium and add the sliced jalapeno peppers. Sauté for about 3 minutes until they are fragrant and slightly softened.
  5. To the skillet with the jalapenos, add the sliced peaches. Cook for another 3 minutes, stirring occasionally.
  6. Pour the prepared peach glaze into the skillet with the jalapenos and peaches. Stir well.
  7. Return the cooked chicken to the skillet. Spoon the glaze over the top and cook for 1-2 minutes more.
  8. Plate the Jalapeno Peach Chicken and enjoy.
