Ingredients

- 1 cup uncooked old fashioned oats (use gluten-free oats if needed)
- 2 cups water (to cook the oats)

- 1/2 cup cherry tomatoes, halved (adds freshness)

Instructions
- In a small saucepan, bring 2 cups of water to a rolling boil.
- Once boiling, carefully add in 1 cup of uncooked oats, chili powder, cumin, and a generous pinch of kosher salt. Stir to combine.
- Reduce the heat to medium and cook for 5-6 minutes until oats are tender but still have a slight chew.
- Remove from heat and cover for an additional 3 minutes to allow oats to soak in flavors.
- In a bowl, mix together the halved cherry tomatoes, chopped cilantro, green onion, lime juice, salt, pepper, and garlic.
- Serve the cooked oatmeal in a bowl. Top with cheese, tomato mixture, sliced avocado, and sunny-side-up eggs.
