  • 1 small onion, chopped
  • 2 ribs celery, chopped
  • Kosher salt

  • 4 cloves garlic, minced
  • 1 Tbsp. paprika
  • 2 tsp. dried thyme
  • 2 tsp. dried oregano
  • 1 tsp. ground cayenne
  • 1.5 cups low-sodium chicken broth
  • 15 oz. can whole tomatoes, crushed
  • 2 green onions, thinly sliced
  • 2 tsp. Worcestershire sauce
  • 0.5 Juice of lemon
  • 1.5 lb. tails-off shrimp, peeled and deveined
  • Cooked white rice

Instructions

  1. In a large skillet over medium heat, melt butter. Add chopped onion, bell pepper, and celery, cooking until soft, about 5 minutes. Season with salt and pepper for added flavor.
  2. Stir in minced garlic, paprika, thyme, oregano, and cayenne. Cook until fragrant, about 1 to 2 minutes.
  3. Pour in chicken broth and add bay leaves. Bring to a boil, then lower to a simmer for 6 to 8 minutes.
  4. Add the crushed tomatoes, stirring well. Cook until reduced by half, about 10 minutes. Mix in green onions and Worcestershire sauce.
  5. Season with salt and pepper if necessary. Turn off heat and stir in fresh lemon juice.
  6. In a separate skillet, heat vegetable oil over medium-high heat. Add shrimp and cook until pink and opaque, about 2 minutes per side.
  7. Gently fold the shrimp into the stew, ensuring everything is well-coated. Garnish with additional green onions before serving over rice.
