- 1 small onion, chopped

- 1 Tbsp. paprika
- 2 tsp. dried thyme

- 1 tsp. ground cayenne
- 1.5 cups low-sodium chicken broth
- 15 oz. can whole tomatoes, crushed
- 2 green onions, thinly sliced
- 2 tsp. Worcestershire sauce
- 0.5 Juice of lemon
- 1.5 lb. tails-off shrimp, peeled and deveined
- Cooked white rice
Instructions
- In a large skillet over medium heat, melt butter. Add chopped onion, bell pepper, and celery, cooking until soft, about 5 minutes. Season with salt and pepper for added flavor.
- Stir in minced garlic, paprika, thyme, oregano, and cayenne. Cook until fragrant, about 1 to 2 minutes.
- Pour in chicken broth and add bay leaves. Bring to a boil, then lower to a simmer for 6 to 8 minutes.
- Add the crushed tomatoes, stirring well. Cook until reduced by half, about 10 minutes. Mix in green onions and Worcestershire sauce.
- Season with salt and pepper if necessary. Turn off heat and stir in fresh lemon juice.
- In a separate skillet, heat vegetable oil over medium-high heat. Add shrimp and cook until pink and opaque, about 2 minutes per side.
- Gently fold the shrimp into the stew, ensuring everything is well-coated. Garnish with additional green onions before serving over rice.
