- 1 teaspoon salt
- 1 cup unsalted butter, chilled and cubed
- 1/4 cup ice water
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 2–3 drops green food coloring
Instructions
- In a large bowl, combine the flour and salt. Cut in the chilled butter until the mixture resembles coarse crumbs.
- Add the ice water, 1 tablespoon at a time, mixing gently until the dough just begins to come together.
- Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.
- In a medium bowl, whisk together the sugar, eggs, milk, and vanilla until well combined.
- Roll out the chilled dough into a 12-inch circle and transfer to a 9-inch pie dish.
- Pour half of the egg mixture into the pie crust. Add the green food coloring to the remaining egg mixture and stir to combine.
- Carefully pour the green egg mixture over the first layer, creating a swirled effect.
- Bake at 375°F for 40-45 minutes, or until the center is set and the crust is golden brown.
- Allow the pie to cool completely before serving.
