Description

Ingredients

  • 3 pounds sweet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 1/2 cup unsalted butter, melted
  • 2 cups shredded Gruyère or cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced sweet potatoes, heavy cream, melted butter, 1 cup of the shredded cheese, salt, pepper, and nutmeg. Toss gently to coat the potatoes evenly.
  3. Spread the sweet potato mixture in a 9×13-inch baking dish. Cover with aluminum foil and bake for 45 minutes.
  4. Remove the foil, sprinkle the remaining 1 cup of shredded cheese over the top, and continue baking for an additional 15-20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
  5. Let the Scalloped Sweet Potatoes, Sweet Potatoes Au Gratin cool for 5-10 minutes before serving.
