Description

This Savory Pear Tart combines a flaky homemade crust with tender Bosc pears, fragrant rosemary, and tangy gorgonzola cheese, finished with a sweet drizzle of honey. Perfect as an elegant appetizer or a unique dessert that balances sweet and savory flavors in every bite.


Ingredients

  • 2 cups all-purpose flour, sifted
  • ½ teaspoon kosher salt
  • 1 Tablespoon granulated sugar
  • 12 Tablespoons cold unsalted butter, diced ( sticks)
  • ½ cup ice water
  • 2 Tablespoons olive oil
  • 12 garlic cloves, minced
  • 34 Bosc pears, sliced ¼ inch thick
  • 1 teaspoon fresh rosemary
  • ½ cup gorgonzola or blue cheese
  • 23 Tablespoons honey, to drizzle

Instructions

  1. In a large bowl, combine the sifted flour, kosher salt, and granulated sugar. Mix well to evenly distribute the ingredients.
  2. Add the cold, diced butter pieces to the flour mixture. Use a pastry blender to cut the butter into the flour until the mixture resembles small pea-sized bits.
  3. While continuing to blend the mixture, slowly pour in ice water a little at a time until the dough starts to come together.
  4. Turn the dough onto a floured surface and knead it quickly into a smooth ball. Wrap the dough tightly in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat your oven to 400°F (205°C). On a floured surface, roll the chilled dough into a roughly 14×8 inch rectangle. Transfer to a parchment-lined baking sheet.
  6. Brush the surface of the dough with olive oil and sprinkle the minced garlic over it.
  7. Arrange the sliced Bosc pears overlapping on the dough, leaving a 1-inch border. Sprinkle fresh rosemary over the pears.
  8. Bake the tart for 25 minutes until the crust turns golden and pears soften.
  9. Remove from the oven and sprinkle the gorgonzola over the pears. Return to the oven and bake for an additional 20 minutes.
  10. Drizzle with honey as desired, slice into portions, and serve warm or at room temperature.
