Ingredients

  • 1 pound Boneless Skinless Chicken Breast
  • 2 tablespoons Cornstarch
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Freshly Ground Black Pepper
  • 2 tablespoons Olive Oil
  • 2 tablespoons Unsalted Butter
  • 3 cloves Garlic (minced)
  • 1/4 cup Honey
  • 1/4 cup Low-Sodium Chicken Stock
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Hot Sauce
  • 1 teaspoon Red Chili Pepper Flakes
  • 2 tablespoons Chopped Fresh Parsley

Instructions

  1. Start by cutting the boneless skinless chicken breast into 1-inch cubes. Toss the pieces with cornstarch, kosher salt, and freshly ground black pepper in a bowl.
  2. In a skillet, heat olive oil and unsalted butter over medium-high heat for 2-3 minutes.
  3. Add the chicken cubes in a single layer. Cook for 6–8 minutes, turning occasionally until they are golden brown and cooked through.
  4. Reduce the heat to medium and add the minced garlic to the skillet. Sauté for about 30 seconds until the garlic is golden and fragrant.
  5. Stir in the honey, low-sodium chicken stock, lemon juice, and optional hot sauce.
  6. Allow the mixture to simmer for 2–3 minutes until the sauce thickens.
  7. Remove from heat and garnish with chopped parsley and red chili pepper flakes. Serve immediately over rice or noodles.

  • Can use chicken thighs for richer flavor.
  • Feel free to use coconut oil instead of olive oil.
  • Or substitute with more olive oil for a dairy-free version.
  • Maple syrup works as a vegan alternative for honey.
  • Vegetable broth is a substitute for chicken stock.
