Ingredients

- 1 cup All-purpose flour
- 1 cup Milk
- 2 large eggs
- 2 tablespoons Melted butter
- 1/4 teaspoon Salt
- 1 cup Cheddar cheese
- 1 cup Spinach
- 2 large Scrambled eggs
- 1/2 cup Tomatoes
- 2 tablespoons Chives
- as needed Cooking spray or butter
Instructions
- Preheat your non-stick skillet over medium heat for about 3 minutes.
- Blend together the flour, milk, eggs, melted butter, and salt until the mixture is completely smooth. Let the batter rest for at least 30 minutes.
- Grease the skillet lightly with butter or cooking spray before cooking each crepe.
- Pour about 1/4 cup of the crepe batter into the pan. Tilt and swirl the pan to spread the batter thinly. Cook for 1–2 minutes, then carefully flip.
- Stack the finished crepes on a plate, separating them with parchment paper to keep them from sticking.
- Fill each crepe with a mixture of scrambled eggs, sautéed spinach, shredded cheddar cheese, and diced tomatoes. Fold or roll them up.
- Garnish by sprinkling chopped chives on top just before serving.
