Description

Delicious Savory Breakfast Crepes filled with creamy cheddar, fresh spinach, and fluffy scrambled eggs, perfect for any morning.


Ingredients

  • 1 cup All-purpose flour
  • 1 cup Milk
  • 2 large eggs
  • 2 tablespoons Melted butter
  • 1/4 teaspoon Salt
  • 1 cup Cheddar cheese
  • 1 cup Spinach
  • 2 large Scrambled eggs
  • 1/2 cup Tomatoes
  • 2 tablespoons Chives
  • as needed Cooking spray or butter

Instructions

  1. Preheat your non-stick skillet over medium heat for about 3 minutes.
  2. Blend together the flour, milk, eggs, melted butter, and salt until the mixture is completely smooth. Let the batter rest for at least 30 minutes.
  3. Grease the skillet lightly with butter or cooking spray before cooking each crepe.
  4. Pour about 1/4 cup of the crepe batter into the pan. Tilt and swirl the pan to spread the batter thinly. Cook for 1–2 minutes, then carefully flip.
  5. Stack the finished crepes on a plate, separating them with parchment paper to keep them from sticking.
  6. Fill each crepe with a mixture of scrambled eggs, sautéed spinach, shredded cheddar cheese, and diced tomatoes. Fold or roll them up.
  7. Garnish by sprinkling chopped chives on top just before serving.
