- 8 ounces white chocolate, chopped
- 1 cup heavy cream
- 1/4 cup granulated sugar
Instructions
- In a medium heatproof bowl, melt the white chocolate over a double boiler, stirring frequently until smooth. Remove from heat and let cool slightly.
- In a large bowl, whip the heavy cream with an electric mixer until stiff peaks form.
- Gently fold the whipped cream into the melted white chocolate, being careful not to overmix.
- Fold in the fresh raspberries, reserving a few for garnish.
- Spoon the Raspberry & White Chocolate Mousse into individual serving dishes or ramekins.
- Refrigerate for at least 2 hours, or until set.
- Serve chilled, garnished with the reserved raspberries.
