- 2 cups all-purpose flour
- 1/2 cup protein powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, chilled and cubed
- 1/4 cup ice water
- 1 1/2 cups fresh raspberries
- 2 tablespoons honey
Instructions
- In a food processor, pulse the flour, protein powder, and salt until combined.
- Add the chilled butter cubes and pulse until the mixture resembles coarse crumbs.
- Slowly add the ice water and pulse until the dough just begins to come together.
- Turn the dough out onto a lightly floured surface and gently knead into a ball. Wrap in plastic and refrigerate for at least 30 minutes.
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- On a lightly floured surface, roll the dough out to 1/8-inch thickness. Cut into rectangles, about 4×6 inches.
- Place half of the rectangles on the prepared baking sheet. Top each with a tablespoon of fresh raspberries and a drizzle of honey.
- Cover with the remaining dough rectangles and press the edges to seal.
- Bake for 18-20 minutes, until the pastry is golden brown.
- Allow to cool for 5 minutes before serving.
