Ingredients

  • 1 pound ground pork (or ground chicken)
  • 3 green onions (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 small flour tortillas (street-size)
  • 2 tablespoons vegetable oil (divided)
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar (or honey)
  • 1 clove garlic (finely minced)
  • ½ teaspoon chili oil (optional)

Instructions

  1. In a bowl, combine ground pork, green onions, garlic, ginger, soy sauce, sesame oil, sugar, salt, and black pepper. Mix gently until combined.
  2. Lay tortillas flat and evenly divide the filling, spreading 2 to 3 tablespoons onto one side of each tortilla.
  3. Heat 1 tablespoon vegetable oil in a skillet over medium heat. Place tortillas meat-side down and cook for 4 to 5 minutes until golden.
  4. Flip the tacos and cook for another 2 to 3 minutes until the tortilla crisps.
  5. Fold each tortilla in half and cook for 1 minute per side to crisp the edges. Transfer to a plate.
  6. Repeat with remaining tortillas, adding oil to the skillet as needed.
  7. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar or honey, minced garlic, and chili oil if desired.
  8. Serve tacos hot with the soy dipping sauce on the side.
