  • 1 box Instant Pistachio Pudding Mix
  • 1 can Crushed Pineapple (with juice)
  • 3 large Eggs
  • 1/2 cup Vegetable Oil
  • 1 cup Cold Milk
  • 8 oz Cool Whip or Whipped Topping
  • Optional: Chopped pistachios for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, combine the yellow cake mix, one box of instant pistachio pudding mix, crushed pineapple (including the juice), eggs, and vegetable oil.
  3. Mix the ingredients until they are just combined and smooth. Be careful not to overmix.
  4. Pour the cake batter into the prepared baking pan and spread it evenly.
  5. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Allow the cake to cool completely in the pan.
  7. While the cake cools, prepare the frosting. In a separate bowl, whisk the second box of instant pistachio pudding mix with the cold milk until it thickens.
  8. Gently fold the Cool Whip into the thickened pudding mixture until well combined, creating a fluffy frosting.
  9. Once the cake has completely cooled, spread the pistachio frosting evenly over the top.
  10. Refrigerate the frosted Pistachio Pineapple Cake for at least 1 hour to allow the frosting to set and the flavors to meld.
