Description

Ingredients

  • ½ cup whole milk
  • 1 tsp vanilla extract
  • ½ cup peach puree (fresh or canned)
  • 1 cup unsalted butter (creamy)
  • 4 cups powdered sugar (sifted to avoid lumps)
  • ½ cup peach puree (for a fruity twist)
  • ¼ cup champagne or sparkling wine (for shimmer)
  • a pinch salt (to enhance sweetness)
  • slices from 1 peach fresh peach slices (for decoration)
  • candied peach or cherry (optional for sweetness)
  • sparkling sugar or granulated sugar (for glamour)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream together the butter and sugar until light and fluffy, about 2–3 minutes.
  4. Add the eggs one at a time, beating well after each addition.
  5. In a separate bowl, whisk together the champagne, milk, vanilla extract, and peach puree.
  6. Gradually mix the dry ingredients into the butter mixture, alternating with the wet ingredients.
  7. Spoon the batter into the cupcake liners, filling each about 2/3 full. Bake for 18–20 minutes.
  8. Allow the cupcakes to cool completely before frosting.
  9. Beat the butter until smooth and creamy, then gradually add the sifted powdered sugar, peach puree, champagne, and a pinch of salt.
  10. Frost the cooled cupcakes with the peach buttercream using a piping bag.
  11. Garnish with fresh peach slices and a sprinkle of sparkling sugar.
