Ingredients

  • 2 large eggs
  • 1 cup ricotta cheese
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 tablespoon orange zest
  • 1 cup chocolate chips

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat the eggs. Then stir in the ricotta, milk, and melted butter until well combined.
  3. Pour the wet ingredients into the dry ingredients and whisk just until combined (do not overmix).
  4. Fold in the orange zest and chocolate chips.
  5. Heat a lightly oiled griddle or nonstick skillet over medium heat.
  6. Scoop the batter by 1/4 cupfuls onto the griddle and cook for 2-3 minutes per side, or until golden brown.
