- 1 lb chicken thighs, boneless and skinless
- 2 cups basmati rice
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons shawarma spice blend
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Stir in the chicken thighs and shawarma spice blend, cooking until the chicken is browned.
- Add the diced tomatoes and chicken broth, bringing to a simmer.
- Stir in the basmati rice, cover, and reduce heat to low.
- Cook for 20 minutes or until rice is tender and liquid is absorbed.
- Fluff the rice with a fork and garnish with fresh parsley before serving.
