Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup white sugar
  • 2 large egg yolks
  • ½ teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • ½ teaspoon baking powder

Instructions

  1. Preheat the oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, combine 1 cup of softened unsalted butter and ½ cup of white sugar. Beat together until light and creamy, about 2-3 minutes.
  3. Add two egg yolks and ½ teaspoon of vanilla extract. Mix until well incorporated and smooth.
  4. Gradually beat in 2 ¼ cups of all-purpose flour and ½ teaspoon of baking powder. If crumbly, use your hands to bring it together.
  5. Load the prepared dough into a cookie press and shape onto the baking sheets, leaving space between each cookie.
  6. Bake for 8 to 10 minutes, until the edges are lightly browned.
  7. Allow cookies to cool on the sheets for a few minutes, then transfer to a wire rack to cool completely.
  8. Dust with powdered sugar once cooled for an extra touch of sweetness.
