- 1.5 lbs white fish (Choose fillets like cod or tilapia)
- 2 tbsp extra-virgin olive oil
- 2 tbsp fresh lemon juice
- Salt
- Black pepper
- 0.5 each red onion
- 1 can artichoke hearts (398ml)
- 1.5 cups cherry tomatoes
- 1 can black olives (398ml, whole or sliced)
- 4–5 cloves garlic
- 2 tsp dried oregano
- 1 tbsp fresh thyme leaves
- 2 tbsp capers
Instructions
- Preheat your oven to 400 degrees F.
- Slice the red onion, artichoke hearts, and halve the cherry tomatoes and olives. Mince the garlic.
- Arrange the fish fillets on a large baking sheet lined with parchment paper.
- Drizzle the fish with olive oil and lemon juice, then sprinkle with salt, pepper, oregano, and thyme.
- Scatter the red onion, cherry tomatoes, olives, and capers around the fish, and toss the minced garlic on top.
- Bake for about 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
- Garnish with fresh herbs and serve with crusty bread, couscous, or a salad.
