  • 2 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • Salt
  • Black pepper
  • 0.5 each red onion
  • 1 can artichoke hearts (398ml)
  • 1.5 cups cherry tomatoes
  • 1 can black olives (398ml, whole or sliced)
  • 45 cloves garlic
  • 2 tsp dried oregano
  • 1 tbsp fresh thyme leaves
  • 2 tbsp capers

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Slice the red onion, artichoke hearts, and halve the cherry tomatoes and olives. Mince the garlic.
  3. Arrange the fish fillets on a large baking sheet lined with parchment paper.
  4. Drizzle the fish with olive oil and lemon juice, then sprinkle with salt, pepper, oregano, and thyme.
  5. Scatter the red onion, cherry tomatoes, olives, and capers around the fish, and toss the minced garlic on top.
  6. Bake for about 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
  7. Garnish with fresh herbs and serve with crusty bread, couscous, or a salad.
