Description

Matcha Green Tea Shortbread Cookies are rich and buttery, balanced with earthy matcha notes and a drizzle of white chocolate.


Ingredients

  • 1 cup salted butter, room temperature
  • 1 cup powdered sugar
  • 2 tablespoons matcha powder
  • 2 cups all-purpose flour
  • 1/4 cup white chocolate for drizzle

Instructions

  1. In a stand mixer, combine the butter and powdered sugar. Mix on medium speed for 1 minute until smooth.
  2. Add matcha powder and mix for an additional minute, scraping down sides as needed.
  3. Lower speed to low and gradually add flour, mixing until dough comes together.
  4. Transfer dough to a surface and shape into a log, 2 inches in diameter. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
  6. Remove dough from refrigerator and slice into 1/4-inch thick rounds.
  7. Arrange slices 2 inches apart on the baking sheet. Bake for 13 to 15 minutes until edges are light golden.
  8. Transfer cookies to a wire rack to cool completely.
  9. Melt white chocolate in a microwave-safe bowl in 15-second intervals, stirring until smooth. Drizzle over cooled cookies and let set.
