- 1 cup salted butter, room temperature
- 1 cup powdered sugar
- 2 tablespoons matcha powder
- 2 cups all-purpose flour
- 1/4 cup white chocolate for drizzle
Instructions
- In a stand mixer, combine the butter and powdered sugar. Mix on medium speed for 1 minute until smooth.
- Add matcha powder and mix for an additional minute, scraping down sides as needed.
- Lower speed to low and gradually add flour, mixing until dough comes together.
- Transfer dough to a surface and shape into a log, 2 inches in diameter. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
- Remove dough from refrigerator and slice into 1/4-inch thick rounds.
- Arrange slices 2 inches apart on the baking sheet. Bake for 13 to 15 minutes until edges are light golden.
- Transfer cookies to a wire rack to cool completely.
- Melt white chocolate in a microwave-safe bowl in 15-second intervals, stirring until smooth. Drizzle over cooled cookies and let set.
