Ingredients

  • 8 ounces uncooked pasta
  • 11 ounces Italian sausage
  • 4 cloves garlic
  • 1/2 cup dry white wine
  • 1 cup heavy/whipping cream
  • 1 tablespoon tomato paste
  • 1/3 cup sun-dried tomatoes
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1 teaspoon cornstarch
  • 1 small handful fresh basil
  • 1 cup freshly grated parmesan cheese

Instructions

  1. Bring a large pot of salted water to a rolling boil. Cook the pasta until al dente according to package directions, usually about 8-10 minutes. Drain and set aside.
  2. Remove the casing from the Italian sausage and crumble the meat into a hot skillet. Sauté over medium-high heat for 5-7 minutes, until browned and cooked through.
  3. Transfer the cooked sausage to a paper towel-lined plate to absorb excess fat. Leave a little fat in the pan to infuse flavor into the sauce.
  4. Reduce the heat to medium, then add minced garlic and the white wine to the skillet. Sauté for about a minute, allowing the wine to bubble and reduce by half.
  5. In a small bowl, mix the cornstarch with 2 teaspoons of cold water to create a smooth slurry.
  6. Stir in the heavy cream and tomato paste to the skillet. Once well mixed, add the sun-dried tomatoes, oregano, and crushed red pepper flakes. Incorporate the cornstarch slurry.
  7. Return the sausage to the pan and simmer for a few minutes until the sauce thickens to your liking.
  8. Drain the cooked pasta and toss it with the creamy sauce. Serve immediately, topped with fresh basil and a sprinkle of parmesan if desired.
