Marinated & Grilled Salmon with a Zesty Twist


Ingredients

  • 1 stalk Fresh lemongrass (Bashed)
  • 1/2 cup Fresh coriander (Chopped stalks)
  • 1 tablespoon Fresh ginger (Grated)
  • 2 cloves Garlic (Minced)
  • 1/4 cup Low-salt dark soy sauce
  • 1 large Salmon fillet (High-quality)
  • 2 tablespoons Runny honey (For brushing)
  • 2 tablespoons Red chillies (Deseeded and sliced)
  • 2 spring Onions (Sliced)
  • 1 lime (Juiced)

Instructions

  1. Bash the lemongrass until fragrant.
  2. Prepare the marinade in a bowl by combining the smashed lemongrass, chopped coriander stalks, grated ginger, minced garlic, and soy sauce.
  3. Rub the marinade all over the salmon, ensuring it’s coated, then marinate for 1 hour in the refrigerator.
  4. Preheat the grill to 450°F to 500°F.
  5. Grill the salmon for about 10 minutes, basting with honey until sticky and cooked through.
  6. While grilling, prepare the toppings by slicing the chillies and spring onions.
  7. Serve the salmon with toppings of chillies, spring onions, coriander leaves, and lime juice.
