Ingredients

  • 2½ cups (200 grams) graham cracker crumbs
  • ¾ cup boiling water
  • 3 ounces lime gelatin powder
  • ½ cup plain Greek yogurt
  • 8 ounces Cool Whip, thawed

Instructions

  1. Grease a 9 or 10-inch pie dish lightly with shortening or butter, then set it aside.
  2. Melt the unsalted butter in a microwave-safe bowl in 30-second increments until fully melted. Combine with graham cracker crumbs, stirring until evenly coated.
  3. Press the buttered crumbs into the bottom and sides of the prepared pie dish. Freeze for 15-20 minutes.
  4. Whisk together boiling water and lime gelatin powder in a large bowl until dissolved. Whisk in Greek yogurt, then gently fold in thawed Cool Whip.
  5. Pour the lime filling into the chilled crust. Cover with plastic wrap and refrigerate for at least 6 hours.
