This refreshing Lime Jello Pie features a buttery graham cracker crust filled with a zesty lime gelatin, Greek yogurt, and Cool Whip mixture.

- 8 tablespoons unsalted butter
- 2½ cups (200 grams) graham cracker crumbs
- ¾ cup boiling water
- 3 ounces lime gelatin powder
- ½ cup plain Greek yogurt
- 8 ounces Cool Whip, thawed
Instructions
- Grease a 9 or 10-inch pie dish lightly with shortening or butter, then set it aside.
- Melt the unsalted butter in a microwave-safe bowl in 30-second increments until fully melted. Combine with graham cracker crumbs, stirring until evenly coated.
- Press the buttered crumbs into the bottom and sides of the prepared pie dish. Freeze for 15-20 minutes.
- Whisk together boiling water and lime gelatin powder in a large bowl until dissolved. Whisk in Greek yogurt, then gently fold in thawed Cool Whip.
- Pour the lime filling into the chilled crust. Cover with plastic wrap and refrigerate for at least 6 hours.
- Garnish with additional whipped cream or lime slices if desired, and serve chilled.
