- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup honey, plus more for drizzling
- 2 tablespoons dried culinary lavender, plus more for garnish
- 1 teaspoon vanilla extract
- 1 tablespoon unflavored gelatin powder
Instructions
- In a medium saucepan, combine the heavy cream, milk, 1/2 cup honey, and 2 tablespoons of dried lavender. Heat the mixture over medium, stirring occasionally, until it just begins to simmer.
- Remove the saucepan from the heat and let the lavender steep for 15 minutes.
- Sprinkle the gelatin powder over the surface of the cream mixture and whisk until completely dissolved.
- Strain the mixture through a fine-mesh sieve to remove the lavender, then stir in the vanilla extract.
- Divide the panna cotta mixture evenly among 6 ramekins or small glasses. Refrigerate for at least 4 hours, or until set.
- When ready to serve, run a knife around the edge of each panna cotta and invert onto a plate, if desired. Drizzle with additional honey and garnish with fresh lavender sprigs.
