Description
Indulge in the delightful flavors of Karpatka Cake, a classic Polish dessert with a flaky, golden crust and a rich, creamy interior.
Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 4 large eggs
- 1 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups heavy cream
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan and set aside.
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the softened butter and mix until it resembles coarse crumbs.
- Separate the egg yolks and whites into two different bowls. Add the egg yolks to the flour mixture and stir until a dough forms.
- In a separate bowl, beat the egg whites with an electric mixer until stiff peaks form.
- Gently fold the whipped egg whites into the dough mixture until well combined.
- Press half of the dough into the prepared baking pan, creating an even layer.
- In a separate bowl, whip the heavy cream with the powdered sugar until it forms stiff peaks.
- Spread the whipped cream over the dough layer in the pan.
- Crumble the remaining dough over the top of the cream layer, creating an even, crumbly topping.
- Bake the Karpatka Cake in the preheated oven for 30-35 minutes, or until the top is golden brown.
- Allow the cake to cool completely before cutting and serving.
Notes
- Store leftovers in an airtight container in the refrigerator.
- For added flavor, you can include a layer of fruit or chocolate.
