Instructions
- Preheat your oven to 400°F (200°C) and place a rack in the center.
- Mix the herb butter by combining softened butter, minced garlic, chopped rosemary, thyme leaves, lemon zest, salt, and pepper in a medium bowl.
- Prepare the turkey thighs by patting them dry and loosening the skin; spread herb butter under each piece.
- Season the turkey thighs with olive oil, additional salt, and pepper; pour chicken broth into the roasting pan.
- Roast in the oven for about 35–40 minutes, basting halfway through.
- Rest the turkey for 5–10 minutes before serving.
