Description

Warm and cozy Spicy Parsnip Soup with the perfect blend of spices and creamy texture.


Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Onion, diced
  • 1 tablespoon Ginger, grated or pre-chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Garam masala
  • 1 teaspoon Ground cumin
  • 1 teaspoon Turmeric
  • 1/2 teaspoon Dried chilli flakes
  • 4 cups Parsnips, chopped
  • 4 cups Vegetable stock
  • to taste Salt
  • to taste Pepper

Instructions

  1. Heat the olive oil in a large saucepan and add the diced onions. Fry for 4 minutes until softened.
  2. Add the grated ginger, minced garlic, garam masala, ground cumin, turmeric, and dried chilli flakes. Fry for 1 minute.
  3. Combine chopped parsnips, vegetable stock, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Blend the soup until smooth using a blender or immersion blender.
  5. Reheat if needed to your desired temperature.
  6. Serve in bowls, optionally garnishing with fresh herbs.
