Ingredients

- 2 tablespoons Olive oil
- 1 medium Onion, diced
- 1 tablespoon Ginger, grated or pre-chopped
- 2 cloves Garlic, minced
- 1 teaspoon Garam masala
- 1 teaspoon Ground cumin
- 1 teaspoon Turmeric
- 1/2 teaspoon Dried chilli flakes
- 4 cups Parsnips, chopped
- 4 cups Vegetable stock
- to taste Salt
- to taste Pepper
Instructions
- Heat the olive oil in a large saucepan and add the diced onions. Fry for 4 minutes until softened.
- Add the grated ginger, minced garlic, garam masala, ground cumin, turmeric, and dried chilli flakes. Fry for 1 minute.
- Combine chopped parsnips, vegetable stock, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Blend the soup until smooth using a blender or immersion blender.
- Reheat if needed to your desired temperature.
- Serve in bowls, optionally garnishing with fresh herbs.
