- 2 oz (60 gr) semi-sweet chocolate, chopped
- 1 cup (200 gr) sugar
- 2 eggs
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup (65 gr) all-purpose flour
- 1 oz (30 gr) cream cheese, softened
- 1/4 cup (30 gr) powdered sugar
- 4 tablespoons pureed strawberries
- 1 oz (30 ml) heavy cream
Instructions
- Set your oven to 350°F (180°C) and line a 9×9 inch baking pan with parchment paper to prevent sticking and ensure easy removal.
- In a large saucepan over low heat, combine the butter and chopped semi-sweet chocolate. Stir continuously until both are fully melted and the mixture is smooth.
- Remove the saucepan from heat. Stir in the sugar thoroughly to blend it with the chocolate and butter base.
- Add the eggs one at a time along with vanilla extract and a pinch of salt. Whisk vigorously until the mixture is well combined and smooth.
- Sift the flour over the chocolate mixture. Gently fold it in just until incorporated, being careful not to overmix to maintain brownie tenderness.
- Pour the batter evenly into the prepared baking pan, spreading it into a thin, uniform layer. Bake for approximately 20 minutes or until a toothpick inserted comes out with moist crumbs.
- Remove from oven and allow the brownies to cool completely in the pan to firm up for easy cutting.
- In a medium bowl, beat the softened cream cheese with powdered sugar until smooth and creamy.
- Stir in the pureed strawberries into the cream cheese mixture until evenly blended.
- In a separate bowl, whip the heavy cream until soft peaks form, indicating it’s light and airy.
- Gently fold the whipped cream into the strawberry cream cheese mixture until fully incorporated, producing a fluffy strawberry mousse. Chill until ready to use.
- Use a heart-shaped cookie cutter to cut the cooled brownies into about 14 hearts, each about 1 3/4 to 2 inches in size. Save any leftover brownie pieces for snacking.
- Fill a pastry bag with the chilled strawberry cream. Pipe the mousse onto half of the hearts, then top each with another heart to create sandwiches.
- Store the brownie sandwiches in the refrigerator to set the filling. Before serving, dust with powdered sugar for a pretty finish and enjoy this delightful treat.
