- 1 can full-fat coconut milk
- 1/2 cup cornstarch
- 1/2 cup sugar
- 1 cup water
Instructions
- Mix cornstarch and water in a small bowl until dissolved. Set aside.
- Heat coconut milk and sugar in a saucepan over medium heat, whisking until it gently boils (3-5 minutes).
- Slowly whisk the cornstarch-water mixture into the warm coconut milk.
- Reduce heat to low and cook for 10-15 minutes, whisking frequently, until the mixture thickens and pulls away from the pan sides.
- Pour into a greased or lined 8×8 pan. Cool for 15 minutes at room temperature, then refrigerate for 1-2 hours until set.
- Cut into squares and serve.
Notes
- Garnish with shredded coconut or fresh tropical fruits.
- Store leftovers in an airtight container in the refrigerator for up to 2-3 days.
- For a firmer texture, use slightly more cornstarch. For a softer texture, use slightly less.
- Agar-agar can be substituted for cornstarch for a lighter, jelly-like texture. Use about 1 tablespoon of agar-agar powder per cup of liquid, and ensure it boils briefly to activate.
