- 4 boneless, skinless chicken breasts
- 4 ounces goat cheese, softened
- 1 tablespoon olive oil
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons balsamic vinegar
- 1 tablespoon brown sugar
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat oven to 400°F.
- Slice each chicken breast horizontally to create a pocket. Stuff each pocket with 1 ounce of the goat cheese.
- Heat the olive oil in a large skillet over medium heat. Add the sliced onions and sauté for 10-15 minutes, stirring frequently, until caramelized.
- Add the minced garlic, balsamic vinegar, and brown sugar. Cook for an additional 5 minutes, until the onions are very soft and sweet.
- Place the stuffed chicken breasts in a baking dish. Top each with a portion of the caramelized onions.
- Bake for 25-30 minutes, until the chicken is cooked through and the internal temperature reaches 165°F.
- Garnish with fresh thyme before serving.
