  1. Prepare Dough: In a bowl, whisk together the gluten-free baking flour, baking powder, and salt. Cut in the dairy-free butter and coconut oil until the mixture resembles coarse crumbs. Add ice-cold water gradually until the dough sticks together, then chill for 1 hour.
  2. Make Filling: In a separate bowl, combine cane sugar, gluten-free flour, and matcha powder.
  3. Roll Dough: After chilling, roll the dough out into two rectangles, each measuring 7½ x 10½ inches. Place one rectangle on a lined baking sheet, creating the bottom layer for your pop tart.
  4. Assemble Pop Tart: Evenly spread the matcha filling over the dough, wet the edges with water, and top with the second dough rectangle. Press to seal and use a fork to crimp the edges, ensuring no filling escapes. Poke holes in the top for steam to escape.
