- 4 fillets Fresh cod, skinless
- 4 cloves Garlic, finely minced
- 3 tablespoons Fresh lemon juice
- 2 tablespoons Olive oil
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 2 cups Broccoli florets
- 1 cup Cherry tomatoes
- 1 large Red bell pepper, sliced
- 1 medium Red onion, sliced
- 1 teaspoon Dried Italian herbs
- 2 tablespoons Fresh parsley, chopped
- 1 teaspoon Lemon zest
Instructions
- Preheat your oven to 400°F.
- In a bowl, whisk together minced garlic, fresh lemon juice, olive oil, salt, and pepper. Coat the cod fillets and let them marinate for 10 minutes.
- On a large baking sheet, toss broccoli florets, cherry tomatoes, red bell pepper, and red onion slices with olive oil, dried Italian herbs, salt, and pepper until evenly coated.
- Arrange the seasoned vegetables on the edges of the baking sheet. Nestled the marinated cod fillets in the center.
- Bake at 400°F for 15–18 minutes, or until the cod flakes easily with a fork and the vegetables are tender-crisp.
- Sprinkle chopped fresh parsley and lemon zest over the cod and vegetables. Serve immediately.
