Description

Delightful Garlic Herb Muffin Pan Potato Galette is a stunning side dish perfect for cozy dinners and potlucks.


Ingredients

  • 1 spray Cooking spray
  • 4 large Russet potatoes, peeled (2 pounds total)
  • 3 tablespoons Unsalted butter, melted
  • 2 tablespoons Olive oil
  • 4 cloves Garlic, minced
  • 1 tablespoon Chopped fresh thyme
  • 1 tablespoon Chopped fresh rosemary
  • 1 teaspoon Fine sea salt
  • to taste Freshly ground black pepper
  • Thyme and rosemary sprigs for garnish

Instructions

  1. Preheat your oven to 375°F. Spray a 12-cup muffin pan with cooking spray.
  2. Slice the potatoes thinly, approximately 1/16th inch-thick, using a mandoline or sharp knife.
  3. Mix together the melted butter, olive oil, minced garlic, chopped thyme, rosemary, salt, and pepper in a large bowl.
  4. Toss the sliced potatoes in the mixture until they are evenly coated.
  5. Layer the potato slices in your prepared muffin pan, filling each cup generously. Drizzle any remaining mixture over the top.
  6. Bake in the preheated oven for 45-50 minutes, until golden brown and centers are tender. Rotate pans halfway through.
  7. Let stand in the pan for 5 minutes after removing. Garnish with sprigs of fresh thyme and rosemary.
