- 4 large Russet potatoes, peeled (2 pounds total)
- 3 tablespoons Unsalted butter, melted
- 2 tablespoons Olive oil
- 4 cloves Garlic, minced
- 1 tablespoon Chopped fresh thyme
- 1 tablespoon Chopped fresh rosemary
- 1 teaspoon Fine sea salt
- to taste Freshly ground black pepper
- Thyme and rosemary sprigs for garnish
Instructions
- Preheat your oven to 375°F. Spray a 12-cup muffin pan with cooking spray.
- Slice the potatoes thinly, approximately 1/16th inch-thick, using a mandoline or sharp knife.
- Mix together the melted butter, olive oil, minced garlic, chopped thyme, rosemary, salt, and pepper in a large bowl.
- Toss the sliced potatoes in the mixture until they are evenly coated.
- Layer the potato slices in your prepared muffin pan, filling each cup generously. Drizzle any remaining mixture over the top.
- Bake in the preheated oven for 45-50 minutes, until golden brown and centers are tender. Rotate pans halfway through.
- Let stand in the pan for 5 minutes after removing. Garnish with sprigs of fresh thyme and rosemary.
