- 4 fillets Cod (skinless and boneless)
- 1 cup Plain Flour (can use gluten-free flour if needed)
- 1 teaspoon Salt (adjust according to your diet)
- 1 teaspoon Black Pepper (adjust to taste)
- 4 tablespoons Unsalted Butter
- 2 tablespoons Olive Oil
- 4 cloves Garlic (freshly diced)
- 1 teaspoon Garlic Powder
- 1 cup Vegetable Stock
- 2 tablespoons Fresh Parsley (chopped)
Instructions
- In a large shallow dish, mix together the plain flour, salt, and black pepper.
- Pat the cod fillets dry with paper towels.
- In a non-stick pan, heat the olive oil and unsalted butter over medium-high heat until melted.
- Add the coated cod fillets to the hot pan and fry for 2-3 minutes on each side.
- Remove the cod and sauté the finely diced garlic for about 30 seconds.
- Pour in the vegetable stock, stirring in any remaining butter and allow to thicken.
- Place the cod fillets back in the pan, basting in the sauce, and heat through for another minute.
- Plate your Garlic Butter Cod immediately, garnishing with fresh parsley and lemon wedges.
