Ingredients

  • 4 fillets Cod (skinless and boneless)
  • 1 cup Plain Flour (can use gluten-free flour if needed)
  • 1 teaspoon Salt (adjust according to your diet)
  • 1 teaspoon Black Pepper (adjust to taste)
  • 4 tablespoons Unsalted Butter
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic (freshly diced)
  • 1 teaspoon Garlic Powder
  • 1 cup Vegetable Stock
  • 2 tablespoons Fresh Parsley (chopped)

Instructions

  1. In a large shallow dish, mix together the plain flour, salt, and black pepper.
  2. Pat the cod fillets dry with paper towels.
  3. In a non-stick pan, heat the olive oil and unsalted butter over medium-high heat until melted.
  4. Add the coated cod fillets to the hot pan and fry for 2-3 minutes on each side.
  5. Remove the cod and sauté the finely diced garlic for about 30 seconds.
  6. Pour in the vegetable stock, stirring in any remaining butter and allow to thicken.
  7. Place the cod fillets back in the pan, basting in the sauce, and heat through for another minute.
  8. Plate your Garlic Butter Cod immediately, garnishing with fresh parsley and lemon wedges.
