Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups chopped kale or spinach
- 1 can (15 oz) white beans, drained and rinsed
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; sauté until softened.
- Stir in garlic and cook for another minute.
- Add vegetable broth, diced tomatoes, thyme, rosemary, salt, and pepper; bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add kale and white beans; cook for an additional 5 minutes.
- Adjust seasoning if necessary and serve hot.
