- 1/2 teaspoon sesame oil
- 1 teaspoon Shaoxing wine (optional)
- 1 teaspoon oyster sauce
- 2 teaspoons soy sauce
- 1 pinch sugar
- 3 dashes white pepper (adjust to taste)
- 3 tablespoons oil (for frying)
Instructions
- Start by cracking the three large eggs into a bowl. Use a fork to beat them until well combined, ensuring they’re light and frothy.
- Add the bean sprouts, ground pork, shrimp, and chopped scallion to the egg mixture. Stir well to combine everything thoroughly.
- Place a wok or large pan on high heat and pour in the oil. Allow the oil to heat up until it shimmers.
- Ladle some of the egg mixture into the pan, aiming for a diameter of about 4-5 inches.
- Using chopsticks, gently push the bean sprouts and other fillings to the center of the omelet. Let it cook for approximately 3 minutes.
- Carefully flip the omelet and fry until both sides are golden brown, about 2-3 minutes.
- Plate your warm omelets and serve immediately with steamed rice.
