This Easy Sheet Pan Tomato Herb Pizza is bursting with flavor, perfect for weeknight dinners or weekend projects.


Ingredients

  • 1/2 pound pizza dough (Store-bought or homemade)
  • 3 cups cherry tomatoes (Fresh or canned)
  • 4 cloves garlic (Smashed and grated)
  • 2 teaspoons fig preserves (Honey can be substituted)
  • 1/4 cup extra virgin olive oil (For drizzling)
  • 2 tablespoons fresh thyme leaves (Dried thyme can be used)
  • 1/4 cup fresh basil (For garnish)
  • 1/4 cup fresh oregano (Dried can be used)
  • 12 teaspoons fennel seeds (Optional)
  • 1 pinch crushed red pepper flakes (For heat)
  • 1 pinch kosher salt (For flavor balance)
  • 1 pinch black pepper (For flavor balance)
  • 1 cup shredded whole milk mozzarella
  • 1 cup shredded fontina cheese
  • 1/2 cup grated parmesan (For finishing)
  • 3 ounces pepperoni (Optional, can be substituted)

Instructions

  1. Preheat the oven by positioning the rack in the upper third and setting it to 500°F. Allow it to heat for at least 30 minutes.
  2. Prepare the pizza dough by placing it on a lightly oiled quarter sheet pan. Drizzle olive oil on top for flavor and softness, then cover with plastic wrap and let it rest for at least 30 minutes.
  3. Roast the tomatoes by combining them with olive oil, smashed garlic cloves, fig preserves, thyme, and a pinch of salt and pepper in a roasting pan. Bake for 10-15 minutes until the tomatoes burst, then mash to form a chunky sauce.
  4. Mix up the herb seasoning by combining basil, oregano, grated garlic, fennel seeds, and a pinch each of red pepper flakes, salt, and pepper in a bowl.
  5. Shape the dough by removing the plastic wrap and gently pressing it to cover the sheet pan evenly. Drizzle lightly with olive oil, spread the roasted tomato sauce, and generously top with mozzarella, fontina, pepperoni, and the herb seasoning.
  6. Bake the pizza in the preheated oven for 10 minutes. Rotate the pan and bake for an additional 3-5 minutes until the crust is golden brown and the cheese is melted and bubbly.
  7. Finish with fresh basil and a sprinkle of crushed red pepper flakes for extra flavor.
