- 1.5 onions
- 4 cremini mushrooms
- 10 oz thinly sliced beef
- 1 Tbsp unsalted butter
- Diamond Crystal kosher salt (to taste)
- Freshly ground black pepper (to taste)
- 1.75 cups water
- 0.5 box Hayashi Rice Sauce (roux)
- 4 servings Japanese short-grain rice
Instructions
- Gather all the ingredients listed above to ensure a smooth cooking process.
- Slice 1½ onions into thin wedges.
- Trim the stem ends from the 4 cremini mushrooms and slice the caps into thin pieces.
- Cut the 10 oz thinly sliced beef into 2-inch sections.
- Heat a medium pot over medium heat and add 1 Tbsp of unsalted butter.
- Sauté the onions in the melted butter, sprinkling with Diamond Crystal kosher salt. Cook for 5 minutes.
- Add the beef to the pot, then season with kosher salt and black pepper. Cook for 2–3 minutes.
- Incorporate the mushrooms next, stirring to combine, and pour in 1¾ cups of water.
- Bring to a boil, then cover and lower the heat to maintain a gentle simmer for 20 minutes.
- Turn off the heat. Using a ladle, dissolve 1–2 cubes of Hayashi Rice Sauce in some of the cooking liquid.
- Stir the dissolved roux back into the pot, repeating with remaining cubes until fully incorporated.
- Cook on medium heat for another 5 minutes to allow the sauce to thicken.
- Serve by dividing 4 servings of cooked rice on one side of shallow bowls while ladling the sauce on the other side.
