  • 2.5 ounces kataifi
  • 4 ounces pistachio cream
  • 2 tablespoons cornstarch
  • 1/4 cup pistachios (roughly chopped)
  • 1/2 cup freeze dried strawberries (roughly chopped, optional)

Instructions

  1. Prepare the Pan: Line a 9×9-inch baking dish with parchment paper, leaving a 1-inch overhang on all sides.
  2. Melt the Base: In a microwave-safe bowl, combine white chocolate chips, sweetened condensed milk, and pistachio cream. Microwave in 30-second increments until melted, stirring between, about 60 to 90 seconds until smooth.
  3. Flavor Up: Stir in vanilla extract and, if using, almond extract. Pour this mixture into the prepared pan and press it into the corners, smoothing the top with a spatula.
  4. Make the Chocolate Topping: In another microwave-safe bowl, combine semi-sweet chocolate chips and heavy cream. Microwave in 15-second increments until fully melted and smooth, then drizzle this over the pistachio layer.
  5. Cook the Kataifi: Melt salted butter in a nonstick skillet over medium heat. Add the kataifi and cook, stirring occasionally, until golden brown, about 5 minutes.
  6. Combine Ingredients: Stir in pistachio cream and cornstarch until the mixture is fully combined.
  7. Top the Fudge: Spoon the kataifi mixture on top to cover the fudge. Sprinkle chopped pistachios and freeze-dried strawberries over the top.
  8. Chill to Set: Return the fudge to the refrigerator to solidify for about 30 minutes.
