Description

This Vegan Gambian Peanut Stew (Domoda) is a comforting dish filled with sweet potatoes, kale, and spices, perfect for chilly evenings.

Ingredients

Scale
  • 2 tablespoons Simply Nature Organic Coconut Oil
  • 1 large Yellow Onion
  • 3 cloves Garlic
  • 1 tablespoon Freshly Grated Ginger
  • 1 Jalapeño Pepper
  • 2 tablespoons Tomato Paste
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Cinnamon
  • 1 pinch Cloves
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • 4 cups Low-Sodium Vegetable Broth
  • 3 sprigs Fresh Thyme
  • 2 medium Sweet Potatoes
  • 1/2 cup Simply Nature Organic Creamy Peanut Butter
  • 1 can Cannellini Beans
  • 14 ounces Crushed Tomatoes
  • 2 cups Organic Kale
  • 1 tablespoon Freshly Squeezed Lemon or Lime Juice
  • 1/4 cup Cilantro Leaves and Tender Stems
  • 2 cups White Rice, Brown Rice, Millet, Quinoa, or Fonio

Instructions

  1. In a large, deep nonstick pan or Dutch oven, heat the coconut oil over medium-high heat. Wait until it shimmers, then add the diced onions with a pinch of kosher salt. Cook for about 5 minutes until the onions begin to brown.
  2. Add the chopped garlic, grated ginger, and diced jalapeño peppers to the pan. Sauté for 2 minutes, stirring frequently.
  3. Stir in the tomato paste, ground cumin, coriander, cinnamon, cloves, 1 ½ teaspoons kosher salt, and black pepper. Cook for about 2 minutes.
  4. Splash in a few drops of water to keep the spices from burning.
  5. Pour in the broth or water, stirring to deglaze browned bits from the bottom. Add thyme sprigs, diced sweet potatoes, peanut butter, beans, and crushed tomatoes. Mix well.
  6. Bring to a boil, reduce heat to low and maintain a rapid simmer for 20-25 minutes.
  7. Optional: Blend half of the stew for a creamier texture.
  8. Stir in the chopped kale and let it simmer for 3-5 minutes until wilted.
  9. Add lemon or lime juice and chopped cilantro. Season to taste and serve.
