- 2 pounds chuck roast or sirloin, cut into 1-inch pieces
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 pound mushrooms (white or cremini), sliced
- 2½ cups low sodium beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 tablespoons Worcestershire sauce
- 2 tablespoons cornstarch
- 3 tablespoons water
Instructions
- Generously season the 1-inch pieces of chuck roast or sirloin with salt and pepper to enhance the flavor of the meat.
- Heat olive oil in a skillet over medium-high heat. Add the seasoned steak pieces and brown them thoroughly on all sides to lock in juices and improve texture. Then transfer the browned steak pieces to the crockpot.
- In the same skillet, sauté the chopped onion until translucent to bring out its sweetness. Add the sliced mushrooms and cook until they soften. Transfer this onion and mushroom mixture to the crockpot with the steak.
- Pour the low sodium beef broth into the crockpot. Add dried thyme, dried rosemary, and Worcestershire sauce, stirring gently to combine all ingredients evenly.
- Cover the crockpot and cook on low heat for 6 hours or on high heat for 3 hours, allowing the steak to become tender and flavors to meld beautifully.
- About one hour before the cooking ends, mix cornstarch and water in a small bowl to create a slurry. Stir this into the crockpot to thicken the gravy to your desired consistency.
- Once the steak is tender and the gravy is thickened, serve the crockpot steak and gravy hot, ideally over cooked pasta, mashed potatoes, or your favorite side dish.
