- 2 cups shredded cooked chicken
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 12 small corn or flour tortillas
- 2 tablespoons olive oil
Instructions
- Preheat oven to 400°F (200°C).
- In a medium bowl, mix together the shredded chicken, cheddar cheese, onion, garlic, chili powder, cumin, and salt until well combined.
- Lay the tortillas on a flat surface. Spoon about 2-3 tablespoons of the chicken mixture onto the center of each tortilla.
- Tightly roll up the tortillas and place them seam-side down on a baking sheet.
- Brush the tops of the taquitos with the olive oil.
- Bake for 15-20 minutes, or until the tortillas are crispy and golden brown.
