Description

This creamy spinach and cheese lasagna recipe offers comforting layers of ricotta, tender spinach, and gooey mozzarella, creating a delightful and easy-to-make main course. Perfect for family dinners or a cozy night in, it balances wholesome ingredients with indulgent flavors.

Ingredients

Scale
  • 2 cups Fresh spinach, well-drained
  • 15 ounces Ricotta cheese
  • 2 cups Mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 large Egg
  • 24 ounces Marinara sauce
  • 3 cloves Garlic, freshly minced
  • 2 tablespoons Olive oil
  • 12 noodles Lasagna noodles, no-boil or boiled

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a drizzle of olive oil over medium heat, cook minced garlic and fresh spinach until wilted and fragrant, about 2 minutes.
  3. In a medium bowl, stir together creamy ricotta, egg, half the Parmesan, and seasoned spinach until mixture is smooth and well combined.
  4. Pour marinara into a saucepan, heat over medium-low for 5 minutes, stirring occasionally.
  5. Spread a thin layer of sauce in a 9×13-inch baking dish, arrange no-boil noodles in a single layer, overlapping slightly.
  6. Dollop half the cheese-spinach mix over noodles, then sprinkle a third of the mozzarella on top.
  7. Add another noodle layer, spread the remaining sauce and cheese mixture, and top with mozzarella and Parmesan.
  8. Cover dish with foil and bake at 375°F for 25 minutes, then remove foil and bake 10 more minutes until bubbly and golden.

Notes

  • Let the lasagna rest for 10 minutes after baking to help it set for cleaner slices.
  • Ensure spinach is well-drained to prevent a watery lasagna.
  • Overlap no-boil noodles slightly for even cooking.
  • Layer sauce and cheese evenly for consistent flavor in every bite.
  • Using fresh garlic in the sauce enhances the overall flavor.
